Why love it?
This coffee comes from one of the few organic-certified farms in Brazil (a hard find!) with a “AAA” quality designation (the highest in the country), and is an excellent example of Brazil's traditional Natural process, under which coffee cherries are dried under the sun over a 7-10 day period, under carefully controlled conditions, and then dry-milled. This results in a cup with intense chocolate and fruit notes and a very thick body. It was farmed by Fazenda Saquarema, in a joint venture with Fazenda Nossa Senhora de Fatima, as an effort to help both estates innovate on their organic farm management techniques. Environmental preservation is a top priority for both, and they're dedicated to replanting native trees and caring for the indigenous fauna and flora, as well as protecting the native species in the region.

Light to medium roasts are flavorful and full-bodied on pour-overs and drip. Bold and creamy as a single-origin Espresso (medium roast recommended for Espressos).
